Easy and Healthy Lentil Soup

Start by gathering the following ingredients:

  • 1 cup of dried green or brown lentils
  • 1 tablespoon of olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 6 cups of low-sodium chicken or vegetable broth
  • 1 teaspoon of dried thyme
  • 1 bay leaf
  • Salt and pepper to taste

Directions:

  1. Rinse the lentils under cold water, and remove any debris or shriveled lentils
  2. Heat the olive oil in a large pot over medium heat

  7. Cover the pot, and simmer for about 30 minutes, or until the lentils are soft and fully cooked through
  8. Remove the bay leaf from the pot, and serve the soup hot
