If you love the classic combination of bacon, lettuce, and tomato, you’ll love this BLT egg bake. It’s simple to make and perfect for lazy Sunday mornings. Here’s what you’ll need:

  • 1 pound sliced bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 2 cups sliced baby spinach
  • 1 cup halved cherry tomatoes
  • 10 large eggs
  • 1 cup milk
  • 1/4 cup chopped fresh basil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

To make the egg bake, preheat your oven to 350°F and lightly grease a 9×13 inch baking dish. In a large bowl, whisk together the eggs, milk, basil, salt, and pepper. Stir in the bacon, cheese, spinach, and tomatoes. Pour the mixture into the prepared baking dish and bake for 35-40 minutes, or until the edges are golden brown and the eggs are set. Let cool for a minute or two before slicing and serving.

Spinach and Mushroom Frittata

This spinach and mushroom frittata is perfect for a Meatless Monday meal. Here’s what you’ll need:

  • 8 large eggs
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cups sliced mushrooms
  • 2 cups baby spinach
  • 1/2 cup crumbled feta cheese
  • 1/4 teaspoon red pepper flakes

To make the frittata, preheat your oven to 350°F. In a large bowl, whisk together the eggs, milk, salt, and pepper. In a large ovenproof skillet, heat the olive oil over medium heat. Add the onion and mushrooms and cook for 5 minutes, or until the mushrooms are tender. Add the spinach and cook for another 2 minutes. Pour in the egg mixture and cook for a few minutes, or until the edges start to set. Sprinkle the feta cheese and red pepper flakes over the top and transfer the skillet to the oven. Bake for 12-15 minutes, or until the eggs are set and the cheese is melted. Serve hot.
